I made these today to go with the Hot Italian Sausage Minestrone. I combined 2 recipes, and they turned out great!
Makes 6 muffins
Preheat the oven to 425
1 cup cornmeal
1/4 cup flour
1 1/2 tsp baking powder
3/4 tsp salt
1 tbl sugar
1/8 cup vegetable oil or melted crisco
1/4 cup sour cream + enough milk to make 1 cup
1 egg, beaten
Mix together all dry ingredients. Mix together all wet ingredients. Add wet to dry and mix together. Pour into 6 muffin tins sprayed with baking spray. Bake at 425 for 15-20 minutes or until browned and a toothpick comes out clean. Run a knife around each one. Remove from pan and serve immediately.
