Smoked Pork Butt

You can do it in the oven or on your grill. Oven is the easiest. To use your grill, turn off all but one or 2 of the burners and place the meat on the side with no heat. Place your hickory chips on the hot side. If you’re in a hurry, roast at 350 for 3 hours instead of 5 hours at 300. Also, Sticky Fingers Memphis Style barbecue sauce is really good if you don’t have time to make sauce. 


Remove pork from fridge about an hour before roasting to come to room temp.

Preheat oven or grill to 325

For a 5lb pork butt (if you buy a whole pork butt/shoulder) have the butcher cut it in half and freeze half.)Place in a roasting pan lined with nonstick aluminum foil (a disposable pan is great for the grill). Baste with mop and season generously with salt and john will’s dry rub.

Roast for an hour at 325. Mop and turn down to 300. Roast another 5ish hours, mopping every 30 minutes. (If you don’t mop, it’ll still be delicious so don’t sweat it.) 

Let rest for 30 minutes. Shred or chop and toss with a little barbecue sauce.
