Creamy Brussel Sprouts

A delicious recipe from my talented daughter-in-law.  

Preheat oven 375


4 slices bacon, cooked crisp, roughly chopped, fat reserved 

1/2 medium onion, chopped 

2 fat cloves garlic, chopped

1 1/2 lbs. brussel sprouts, halved, stems removed 

1/2 tsp salt 

1/2 tsp pepper 

1/2 cup heavy cream 

6 oz sharp white cheddar or gruyere, grated 


In a cast iron skillet cook the bacon, remove and chop. In the grease sauté the onion and garlic. Add the sprouts, sautéing till tender, 8-10 minutes.  Season with salt and pepper.


Remove pan from heat. Add cream and cheese and sprinkle with bacon.


Bake for 15-17 minutes or until sprouts are as tender as you’d like.
