Chimichurri Sauce

This is a quick and easy sauce that is delicious on any grilled meat or fish. 
I like to wash and dry the herbs with my salad spinner. Be sure to rinse several times, especially if the herbs are sandy. If you don't dry them well, the water will dilute the sauce.

4-5 servings

1 clove garlic, peeled
1 handful cilantro, washed and dried well
1 handful parsley, washed and dried well
1/4 tsp red pepper flakes
1/2 tsp salt
1/4 tsp cumin powder
Black pepper to taste
Juice of 1/2 to 1 lime
1/3 cup extra virgin olive oil
(Capers, drained-use less lime juice and salt if adding capers)

Process garlic clove in food processor. Add parsley, cilantro,salt, peppers, and cumin, and pulse 3-4 times or until chopped. Add lime juice, pulse. With machine running, add oil. Add capers if you're using them. Taste and adjust seasonings, lime, oil to your taste.
