This was fantastic--very fresh and delicious. If you can make it with fresh summer corn is is exquisite. If you want to make this ahead, don't add the avocado until you're ready to serve it.
6 ears of corn, shucked and the kernels sliced off the cob or 1 bag of frozen Green Giant white shoe peg corn, defrosted
1 container of grape tomatoes, sliced in half
1/2 red onion, finely chopped
1/2 fresh jalapeño, chopped
handful of fresh cilantro, chopped
1 can black beans, rinsed and drained
1 avocado, chopped
juice of 2 limes
juice of 1 orange
salt & pepper to taste
1-2 tbl olive oil (optional)
Mix all together. Taste and correct seasonings.
